Homemade Granola Bars

Beginning in early August, I started eating healthy.  This meant cutting out almost all packaged foods that weren’t organic or made from whole grains.  My undertaking led me to a delicious homemade granola bar recipe that I found online.  These granola bars aren’t bad!  They’ve become my staple ride food for the past few months.  

3-1/2 cups rolled oats
2 scoops (approx. 8 tbsp.) protein powder
1-1/2 cup nonfat dry milk
1 tbsp. cinnamon
1-1/2 bananas, mashed
2 egg whites
3/4 cup light syrup
1/2 tsp. vanilla extract
1/2 cup of raisins or dried cranberries
1/4 cup orange juice (optional)

Be careful, the directions are extremely difficult!

1. Mix all dry ingredients in a large bowl.
2. Mix all wet ingredients in another bowl.
3. Add the wet stuff to the dry stuff and mix thoroughly.
4. Bake for 25 minutes at 350 degrees for chewy bars.

There is one thing that may cause you some anxiety (if you’re like my mother and you follow recipes to the tee).  Is a banana classified as a “wet thing” or a “dry thing?”  Well, after mashing, bananas become quite viscous so I put them in the “wet things” category.  And really in the end it all gets mixed together, so I don’t think it matters that much.
